
Baked beans from the bread oven

Ingredients:
- 1kg beans
- 1/2kg onion
- 200g peeled tomatoes
- half a head of garlic
- 1-2 roasts or ribs
- smoked Karst pancetta
- lard or lard
- chipotles (or paprika powder)
- native plant
- dried minced mushrooms (this ingredient is not included in classic recipes, but it works great)
- bay leaf
- freshly ground pepper
- salt
Procedure:
After soaking, I rinse the beans well and cook them together with the bay leaf and salt.
I fry the salted onion in the fat until it turns translucent and releases its liquid. In that order, I add the garlic, vegeta, chipotle, mushrooms, and pelates.
I fry the Karst pancetta separately and then carefully and sensitively mix it into the beans so that they don't fall apart. I put sliced roast beef or ribs on top.
We put the dish in a bread oven for 1 hour, or if you don't have that option, put it in the oven at 200 degrees for 1/2 hour.
For those who like a really smoky aroma, like me, we close the smoke vent from the oven for 15 minutes at the end so that the entire dish really gets a strong aroma. Just the gourmet icing on the cake 🙂
Another recommendation:
Soak beans in water with baking soda the night before cooking . This simple and very effective procedure significantly reduces bloating problems that often occur. All legumes, when they come into contact with water, release a substance that naturally stimulates the germination enzyme (beans don't know that they are going to be boiled and later on a plate, they can already be seen growing on stakes :). However, this enzyme is indigestible for our digestive tract, so it makes digestion difficult and consequently leads to bloating.
