
Hazelnut bread

Special bread or healthy cake? It's hard to decide how to describe this hazelnut bread with creamy honey and roasted hazelnuts. The perfect recipe for pampering for breakfast or just for fun! The occasion doesn't matter, does it? Honey is always the right choice.
Ingredients:
- 200 g Melissé cream honey with hazelnuts
- 320g milk
- 140 g sugar-free apple sauce
- 8 g fresh yeast
- 420 g wholemeal spelt flour
- A pinch of salt
- 150 g whole hazelnuts
Procedure:
- Wash the hazelnuts under running water and place them in the oven at 100 degrees for 20 minutes. While still hot, wrap them in a cloth and 'squeeze' them a little to loosen the shell. Crush the clean hazelnuts a little to break them into halves or quarters.
- In a saucepan, combine the honey, milk, and sourdough and heat until warm, so that the honey melts. The liquid should not be hot, as this will kill the yeast and the bread will not rise properly. Set aside.
- In the mixing bowl, place the flour and salt and mix. Make a well in the center, pour in the liquid, crumble the yeast over it, and mix on medium speed with the biscuit attachment (if using a stand mixer) or a whisk until the mixture is sticky and uniform.
- Pour the mixture into a greased and paper-lined baking sheet, sprinkle with hazelnuts and press them into the mixture slightly. Cover with a cloth and leave to rise in a warm, draft-free place for 1 hour.
- Oven heat to 200 degrees .
- After one hour of rising, put the bread in the oven, temperature reduce at 180 degrees and bake for 45-55 minutes.
- Cool in the baking pan and store in a sealed container in a cool place to keep the bread fresh for as long as possible.
- Serve with butter, jam or just on its own.
