  • ginger (2.5%) , which we grow on our land.

The creaminess of honey is achieved through a special processing method that causes the sugar crystals to rub against each other, brightening and thickening them. This type of honey has a delicate creamy texture and is also more spreadable.

Creamy honey with ginger is especially suitable as a spread on bread (we recommend buckwheat bread) due to its creamy and thick texture. You can start your morning with a rich fruit salad and add a spoonful of creamy honey to it.

You can also use it for savory dishes , such as buckwheat porridge, fried pork with vegetables, or chicken in sweet sauce (Chinese style, in a wok).

It is a great addition a cold summer drink (read: lemonade, homemade iced tea), because ginger will fill you with energy and quench your thirst!

Shelf life: Honey is characterized by its longevity if stored under certain conditions. Unopened honey is suitable for consumption for three or more years from the date of filling. After opening the jar, we recommend using it within 6 months.

Storage : Keep it in a dry, cool and dark place.

Creamy honey At first glance, it is very different from the honey we are traditionally used to storing in our kitchens.

Its texture is thicker, creamier, and gives a richer taste. It resembles a spread, making it very popular with children... and their parents are grateful because it makes less of a mess. It's ideal for getting little ones used to eating. traditional Slovenian breakfast!

Producing cream honey is a bit more challenging, as it requires new knowledge, equipment, and more time.

Despite the process, creamy honey remains completely natural and is not thermally processed. It retains all of its most valuable natural ingredients , and during the process it is We do not add enhancers , sugar or any other artificial additives.

We cut fresh ginger into thin slices and dry them in our old bread oven. We maintain a mild temperature for 10 to 14 days, which ensures that the ginger dries completely. By drying, we prevent the ginger from fermenting in the honey. Then we mix it evenly into the creamy honey in the right proportion.

Fresh ginger rhizomes can be purchased in stores. When buying, make sure that the rhizome is not damaged, even moldy, but smooth, taut and fleshy. The color of the skin depends on the variety of ginger, which can be brown, ivory or yellow. Fresh ginger rhizomes are yellowish inside, juicy and crunchy, with noticeable fibers. Wrap the purchased ginger in a clean, damp cloth and store it in the refrigerator. It can also be frozen.

The process we follow on our farm:

  • buy a healthy, firm root with pronounced eyes, preferably from organic production,
  • let's leave it in a warm place on a windowsill where there is a lot of light,
  • Somewhere within two to three weeks, the buds begin to visibly enlarge and acquire a green color, where the future shoot will be,
  • The entire root can be inserted into the soil with the shoot facing upwards, but it is also possible to cut off about 3 cm of ginger in addition to the bud and plant this piece,
  • use high-quality black soil and place in a bright location,
  • When the top of the plant dries, the ginger is ripe.
  • We keep them indoors during the winter, but once there is no longer any fear of frost, the plant is very happy with the sun's rays.

We wish you much success!
